Hello!

I am wondering about the status of Nested Hyper-V Support for VM's?

This is specifically regarding this issue with Parallels Desktop, which claims the issue is on Apple's side:

This question will likely be better answered on the Parallels forums.

The Hypervisor API provides a low level abstraction for nested virtualization on M3 and above. The usage of the APIs by apps is typically discussed with the app developers/vendors directly.
